Shadow Stenciling With Brushed Embroidery
Amelia has been selected as an instructor for the 35th Annual ICES convention in San Diego, California. She will be teaching one of her nationally award winning techniques. In this class students will learn to give the look of added dimension cakes with the use of shadow stenciling and brushed embroidery as seen on Amelia’s 2008 OSSAS award winning cake, “Love Letters”.

Mastering Structures: The Art of Sculpted Cakes
Amelia will teach her method of sculpted cakes. This will be a two day class designed for intermediate/advanced level decorators. Amelia’s nationally award winning methods of creating jaw dropping sculptures as seen in her highly publicized cakes, will teach you to work with several mediums including fondant, modeling chocolate, gumpaste, and other techniques. You will learn all of these methods while making a cute sculpted fairy standing on a toadstool.

Mastering Gumpaste: The Art of Sugar Flowers
Amelia will teach her method of gumpaste flowers, as seen on many of her cakes, including her winning cakes from the Grand National Wedding Cake Competitions in 2008 and 2009 and with her team on TLC’s Ultimate Cake Off.
This will be a 4 hour class designed for intermediate/advanced level decorators. Amelia’s method will teach you to make several types of flowers at a high-level of proficiency. The same proficiency that has won national media attention and awards.
You will learn how to make beautiful exotic Cymbidium Orchids. You will also learn to make easy worry free leafs, and hypernicum berries, as well as learning to combine them into a pleasing arrangement.

This will be a full day class designed for intermediate/advanced level decorators. Amelia’s method will teach you to make many types of flowers at a high-level of proficiency. The same proficiency that has won national media attention and awards.
You will learn how to make beautiful exotic Cymbidium Orchids, Alstroemeria, and Freesia. You will also learn to make easy worry free leafs, hypernicum berries, and the trendy fiddlehead ferns, as well as learning to combine them into a pleasing arrangement.
